Those who spent their youth in Nampo-dong in the 1980s would not be able to pass by Pig's Trotter Alley in Bupyeong-dong, Jung-gu, Busan. A short distance from the Movie Alley, across a one-way street that crosses the road to Bupyeong Market, Pig's Trotter Alley is located. As the sun goes down and the neon lights come on, the pig's trotter shops come to life with the sound of soju glasses clinking to toast.
The cold taste of jokbal (pig's trotters) makes them the perfect accompaniment for soju. It is said that breastfeeding mothers should eat stewed pig's trotters, making them a good nutritional food. They are also well known as an essential longevity food in Okinawa's longevity villages in Japan.
Twenty years ago, jokbal (pig's trotter) shops started opening one by one on Bupyeong-dong Street, and now there are 20 jokbal specialty shops. The prices of jokbal (pig's trotter) are the same for all 12 shops, at 8 won for 4-5 servings, 12 won for XNUMX servings, and XNUMX won for XNUMX servings, but each shop boasts a different jokbal (pig's trotter) flavor.
Hanyang Pig's Trotters (Hanyang Jokbal)





Hanyang Jokbal (246-3039), with its eye-catching white sign, boasts a long history that is reflected in its old Japanese-style building structure. There is only one dish on the menu: jokbal (pig's trotters). There are only five or six side dishes, each of which is carefully prepared and looks neat and delicious. Appetizing dishes include white cabbage kimchi, cold cucumbers seasoned with celery, and a refreshing soup with soybean sprouts and chopped green onions.
Jokbal (pig's trotters) are colored and flavored with 15 kinds of herbal medicines, including cinnamon bark, licorice, garlic, and white onion, and at this restaurant, 30 jokbal (pig's trotters) are stewed in a large pot. After the jokbal (pig's trotters) are placed in the pot at a high temperature of 150 degrees, the oil is thoroughly removed, resulting in a light and chewy flavor.
The liquid in which the herbs are boiled is not discarded, but is repeatedly mixed with other herbal medicines, and the secret to the flavor improves the longer the liquid ages, says owner Yang Seung-ae (56). "At first, we used caramel to create the color, but after seeing how the jokbal (pig's trotters) gradually solidified and changed color over time, we tried various methods and used herbal medicines, which gave it a refreshing flavor," Yang said.
Any leftover jokbal (pig's trotters) will be wrapped up so you can take the seasonings, vegetables, and pig's trotters home and eat them later. As it is a dish that is eaten cold, it is often ordered as a lunch box for people who go out outdoors.
Busan Pig's Trotters (Busan Choppal)






Busan Jokbal (245-5359) is a delicacy made from pig's trotters with five spices. Although it is called five spices, it is a unique jokbal-style sauce made with soy sauce, star anise, sugar, garlic, vinegar, etc., instead of the spices used in the Chinese dish, such as cloves, star anise, and wild herbs.
It is delicious to eat thinly sliced lean pork, sprinkle sauce on it, and sprinkle chopped garlic on top. The house's specialty, gamzatan (potato soup), is a clear soup made from stewed beef bones, so it's delicious.
Hanseong Jokbal (245-8730), the largest restaurant in Jokbalgolmoku, is a popular place for customers in their 20s. It has a reputation as a place for gatherings with large banquet tables on the second and third floors, and is also popular with university students. In the early evening, you can see many female customers sipping beer with their jokbal, and as the night deepens, soju lovers stay up until the crack of dawn.
