Hello, indispensable foods for the hot Korean summer are the summer stamina food Samgyetang (ginseng chicken soup) and the popular cold noodles Naengmyeon (cold noodles), but in Busan, there is a local noodle dish called Milmyeon, which has become a staple summer food. Milmyeon, made with noodles (myeon) made from wheat flour (milcal), was created during the Korean War in 1950, when supplies were scarce and people made noodles using wheat flour, which was relatively abundant. They once expanded into Seoul, but for some reason failed, and now it is a local dish exclusive to Busan.

With summer cooking in full swing, milmyeon specialty restaurants in Busan are busy with customers coming to eat the refreshing, cold milmyeon. However, near Gukje Market, Busan's largest traditional market, there is another restaurant that is popular not only with Busan locals but also with tourists visiting Busan.

Located in Nampo-dong, Halmekaya Milmyeon offers three types of dishes: Milmyeon made with chilled yuksu (meat soup) and ice powder, bibim (mixed) milmyeon eaten with red seasonings, and mandu (steamed dumplings). Just looking at the smooth noodles topped with shredded cucumber, pork, boiled egg, red seasoning, and ice is enough to whet your appetite.

The key to the flavor of milmyeon is undoubtedly the yuksu paste, and this restaurant uses pork and beef bones, vegetables, and 12 kinds of herbal medicines that are simmered for over a day. The noodles are made from domestic wheat flour and corn starch, so they are softer and easier to eat than the cold noodles known in Japan.
