Sukhyang

Located in Beomcheon-dong, Busan (near Beomnaegol Station), "Sukhyang" is a specialty restaurant serving elegant, royal-style bibimbap (goldongban) that is mixed without using gochujang. Its mild and refreshing flavor has made it a popular lunch spot for nearby office workers and for solo diners.

The name of Beomnaegol Station on Busan Subway Line 1 originates from the fact that the area was once a mountain valley where tigers frequently appeared.

When you order a meal, it's brought to you as a single-serving set, beautifully arranged on a tray. The basic side dishes include kimchi, salted squid, pickled onions, and a deeply flavorful sirakguk (dried radish soup).

The signature dish of this restaurant, Goldonban (9,000 won), is a traditional royal court bibimbap with a soy sauce base, containing carrots, mushrooms, a thin omelet, stir-fried meat, and the distinctive "steamed zucchini." It has a light flavor that is neither too salty nor too spicy.

Goldonban (古豆飯) is an old name for a traditional bibimbap dish that was a favorite food in the royal court and the homes of the nobility during the Joseon Dynasty. Unlike modern gochujang bibimbap, its greatest characteristic is that it brings out the natural flavors of the ingredients and is not spicy but light. The meaning of "goldon" is "to mix together" or "to gather various trivial things into one." Like the "antiques" in a museum, it also has the meaning of gathering various valuable ingredients into one dish.

If you prefer lighter Korean food, I recommend "Goldonban," but if you want to eat more meat, I recommend "Kogiban."
