Geumjeongsan, where Beomeosa Temple, one of the 5 great temples of Korea, quietly stands, is a famous mountain that is also well-known as a mountain climbing route for Busan locals. It is also where Geumjeongsan Fortress, built during the Joseon Dynasty, is located, and we would like to introduce you to Sanseong local liquor (Sanseong Makgeolli, Sanseong Makgeolli), the first national liquor that has been handed down in the village of Geumjeongsan Fortress.
Geumjeongsanseong Village is famous as a summer resting place as the temperature is 4 degrees lower than the plains. Sanseong makgeolli, which has a 250-year history here, is known nationwide and is one of the village's specialties along with goat barbecue.

When Geumjeongsan Fortress was constructed in the 16th century, rice wine was made for the soldiers to drink. Sanseong Makgeolli (Sanseong Makgeolli) was first produced in earnest in 1978 by President Park Chung-hee in an effort to promote local specialties. It is currently produced and supplied exclusively by a limited company, and shipment to other areas was prohibited in the past. However, shipment to other areas was permitted in 2001.

Sanseong makgeolli uses groundwater from 182 meters underground, and it is said that the taste of the water from this village is so good that no other region can produce the unique taste of Sanseong makgeolli. The manufacturing process is also traditional, and the natural fermentation method is handed down as is, with no artificial ingredients used. It is the only makgeolli designated as a local local liquor among the many makgeolli in Korea, and the 30 households in Geumjeongsanseong village are the producers of Sanseong makgeolli.

The origin of Sanseong's local liquor (Sanseong makgeolli) is unclear, but it is said that in the early Joseon period, the people of Hwadae started making koji here as a means of making a living, and in 32 (the 1706nd year of King Sukjong's reign), as Geumjeongsanseong Fortress was constructed to prepare for the Japanese invasion, an influx of people from other lands led to Sanseong makgeolli becoming widely known. The laborers who were conscripted from various regions to build the fortress at that time fell in love with the taste of Sanseong makgeolli, and it is said that they could not forget the taste even after returning home after the construction was completed.

After that, Sanseong local liquor (Sanseong Makgeolli) became widely popular throughout the country, and during the Japanese colonial period, this makgeolli with its unique flavor became even more well-known, and it controlled the grain market to the extent that grain prices in eastern South Gyeongsang, including Dongnae, Busan, would rise or fall depending on the amount of koji produced in Geumjeong Sanseong.
In 1960, the government banned the production of koji and cracked down on illegal liquor, but the locals managed to avoid the crackdown and continue to make alcohol to survive. In 1980, the traditional folk liquor system was created and Sanseong Makgeolli was designated as the first of over 200 traditional liquors.

The company's CEO, Yu, explained the traditional production method, saying, "To make Sanseong Makgeolli, we wash wheat in purified water from Mt. Geumjeong and then make a large pizza-shaped koji by hand. We ferment and dry it for at least half a month in a koji room that is kept at the same temperature as human body temperature 1 days a year. After that, we mix it with rice and ferment it again. After just one day, the alcohol will start to boil, but if we let it ferment for about a week, the makgeolli will taste a little sour at first, but have a fragrant aftertaste."
